| 4-H POULTRY
BBQ CONTEST
1. Participants must be 4-H members Intermediate
or Senior Level enrolled in poultry as a project
area by November 1st of the current year.
2. Poultry BBQ is open to all qualifying 4-H
youth in the South Florida Fair participating
counties.
Palm Beach County 4-H offers a

$50.00 savings bond to the first place winner and a $25.00 savings bond
to the second place winner in both age categories.
3. Participants must complete three (3) practice
barbecues and participate in the Food Safety Clinic to be offered at
the December county council meeting. This will be verified via the poultry
barbecue project
record book, which must be submitted on the day of the contest.
4. An illustrated talk is not required for the county level contest, but will
be required at state competition.
5. Contestants advancing to the state level must be 14 years of age with an illustrated
talk for that competition.
6. Participants at the county level will be evaluated on cooking skills and sensory
evaluation according to the national barbecue score sheets. Food safety is considered.
7. Each participant will prepare two 1 1/2 to 2 pound chicken halves provided
by the contest monitors in accordance with the following:
- poultry will not be available to the participant prior to the contest start
time.
-poultry shall not be marinated prior to the contest start time.
-no fluid or sauce may be injected into the poultry.
-poultry halves may not be placed in baskets to aid in turning.
8. There will be a 2 1/2 hour time limit on the preparation of the chicken.
Participants must turn in product at the end of the stated cooking time.
9. Participants will present one barbecued chicken on plates provided to the
judges at the conclusion of their cooking. NO GARNISHES WILL BE PERMITTED.
10. Participants are responsible for bringing the following items:
- original receipe
- completed receipe card
- barbecue grill, no gas grills allowed
- aluminum foil
- charcoal briquettes (1/2 to 3/4 pound per poultry half), self starting charcoal
or automatic fire starter locks are not allowed.
- lighter fluid
- matches or lighting tool
- tongs or other turning device
- second tongs for adding extra briquettes
- water bottle for misting flames or hot spots in the fire.
11. Participants must use a meat thermometer. Grill lids or grill covers will
be permitted. Commercial devices for covering meat
during cooking will not be allowed; only aluminum foil wrap may be used. Remember,
browning is a part of the score sheet.
12. Participants will work alone, except in a case of an emergency, as determined
by contest monitors.
13. Tie scores of the top contestants will be broken in descending order by:
- highest score in sensory evaluation portion
- highest score in cooking skills portion
- a method decided by the contest judges
14. Total points in the 4-H Poultry Barbecue Contest will be 150: sensory skills
- 80 and cooking skills - 70. Youth must inform the 4-H office of their intent
to participate in the contest at the Palm Beach County 4-H office (561) 233-1731
by 5:00 p.m., January
11, 2008.
